in consequence of the missive, What I've always wondered, penned by LouAnn
..it needed preparation and it will be far easier to re-heat it and serve it than cook it on the day when the house is filled with visitors. From a Jane Austen site:
"White Soup seems to have been made from veal or chicken stock (broth), egg yolks, ground almonds and cream. Served with negus* (hot sweetened wine and water) they were warming and intoxicating beverages at balls."
There would, presumably" have been other food and delicasies available and preparation for so many would be no small task.
