the latter of Margaret's two options - a short, clipped Ke followed by an emphasis on the second syllable 'lynch'.

As for applying how Somerset inhabitants pronounce Kellynch to Sir Walter--I wonder if someone with more experience with pronunciation at the time might be able to comment. IMHO Sir Walter is unlikely to speak with a Somerset accent because that would not distinguish him from the 'lower classes' he believes himself above.
