IMO, she really *is* a case of Mrs. Smith's "truism" that "It is a thing of course among us [women], that every man is refused, till he offers." To save face in case things go wrong, she pretends that Mr. Elliot isn't particularly interested in her, when she's secretly convinced he is. I think she is well aware of Mr. Elliot's attentions, but believes they are all for her, rather than for her sister.
