"Piano", in Italian, means soft, or quiet as opposed to "forte" which means loud, strong, forceful. It's a musical term and instruction, so I'm kind of surprised that Admiral Croft knows it. ;-) In fact, the instrument "pianoforte" was named such because it was the first keyboard instrument that was able to play both soft and loud, and over the years it became abbreviated to just "piano."
(More than you wanted to know, I'm sure. Sorry, I'm a piano teacher and so am legally obligated to go on and on and on... ;-)
So, Benwick's personality is too soft, too reticent, and not forceful or assertive enough for the Admiral's taste.
