Perhaps coarse means Mary does not have a soft feminine skin anymore? however, I do not think we are supposed to take Sir Walter Eliot's estimations too seriously- his standard of perfection seems to be impossibly high and I have the impression that he exagerates/dwells too much the imperfections of others.
