Don't forget that the officers of the recently-arrived militia, and the non-military local gentlemen who would have attended the Meryton Assembly before their arrival were not one and the same! Perhaps Darcy had a better opinion of the military than of "lower"-class civilians, perhaps Bingley once again persuaded him to go as a gesture to his new neighbours, or perhaps Darcy was simply in a better mood by this time! ;-)

Just to be clear, by "the gentlemen", I understood that Caroline simply meant Darcy and Mr. Hurst.
