I earlier said I would let anyone who felt it was an officer to keep thinking so, so I am not trying to change your mind back. But your post says the listed officers would not know a Phillips servant, and this joke occured at Colonel Forster's house. Lydia starts the story:

... Dear me! we had such a good piece of fun the other day at Colonel Forster's...

In addition, I always thought 'did not know him in the least' could easily be taken to mean 'did not know he was a man.' But it is still the reader's conjecture -- it could go either way. I choose to read it as being a servant because I think that is funnier, and a more telling sketch of Lydia's insensitivity and imprudent behavior.
