I had always assumed that Mr. Bennett let his wit have full play at the elder Mr. Collins expense. Without the wit to get back verbally at Mr. Bennett, he simply decided to stay angry and avoid him. I can see Mr. Bennett's pride in his own intellect causing him to make a slower cousin the butt of his jokes. A habit he got into early and honed for his own family, perhaps...
