I don't think he is playing hard to get by his insult. At this point he doesn't seem to think in that way. If Bingley had pointed out any other woman in the party, Darcy's response would probably have been the same. Elizabeth was simply the object on which he illustrated his general disdain of the society he is in.

Also, later he doesn't really seem to play hard to get - once he discovers that Elizabeth is attractive, he is continually civil to her.
