Are you new?

I might be completely wrong here but perhaps they simply preferred coffee that night! According to The Jane Austen Cookbook by Maggie Lane and Deirdre Le Faye, "The ladies left after dessert to the drawing room where they would chat, embroider or flip through illustrated books for an hour or so before ordering tea and coffee" (p. 12). So I don't think there is any particular reason for them having tea one night and coffee the other.
