She appears to be one of those who thinks that if they just keep at it long enough, the object of their affection will have a sudden change of heart and see them in a whole new light. That rarely works in real life. I feel that Darcy absolutely knows of Miss Bingley's feelings, is trapped temporarily in her company, and his trying to give her a signal to back off, he is not interested. However, that doesn't mean that his admiration for Lizzy's eyes isn't genuine -- she is obviously on his mind!
