If this is the same St. Nicholas, I believe your'e thinking of Santa Claus !
Most assuredly associated with gift giving !

IIRC, one of the symbols of St Nicholas is 3 golden balls which he gave as dowries to 3 poor women.

Three poor women !

I am unsure if Manfred's offering of the gage (ring) is a gift, perhaps a pledge of security.
Yet Manfred intends them to see it as a gift in the spirit of St. Nicolas- [giving him the ring ]

As the knights rightly distrust Manfred, it's unclear if the ring would've been freely accepted.
