Catherine might have felt honored by the compliment of JT's interest in her, but is too far upset with Isabella's flirting with Captain Tilney, which is a slap in James' face. And then, to lessen the compliment even further, she doesn't even believe that he really cares for her, but she doesn't want it to be true, anyway.

What I find interesting here is the parallel between how she takes offense on behalf of James, similar to how Henry seems to take offense on behalf of Eleanor earlier in the story. Gotta love the positive sibling relationships JA portrays!
