For a horse it would be like for a person who has been excercised heavily. If you don't work them a little the next day, they will get stiff, but nothing more than a quick light trot - certainly not 40 miles (64km!) a day! The horse can go lame - and of course if he would actually sit on the horse's back he would be very lame too.
By the way, this quote shows Catherine knows a bit about horses, at what speed they run - and she can do head calculations quite well, better it seems than what John Thorpe can! “Rest! He has only come three and twenty miles today; all nonsense; nothing ruins horses so much as rest; nothing knocks them up so soon. No, no; I shall exercise mine at the average of four hours every day while I am here.”
“Shall you indeed!” said Catherine very seriously. “That will be forty miles a day.”
