I think it was the custom for guests to help each other choose from the nearest dishes- which gave the gentlemen an opportunity to show fine manners to the ladies.
The menu mentions fruit- so may include one of the General's famous pineapples- provided the General considered you an important guest- Thorpe would feel no doubt, of course. ;)
I wonder if Thorpe hints General Tilney has a reputation for hospitable dinners.
