I wish I had a Rumford roasting oven - I'd love control not only over the heat but also the dryness or moisture of the meat. I wonder how he managed that?

I wonder how they reached the fry pans up high on the walls at Burghley House? It would be very inconvenient to have to grab a ladder every time you wanted one of those pots.
