I reckon the teasing and wit is just naturally in Henry's nature - it probably comes out here because Catherine's own artless nature lends itself to that sort of conversation. And yes, he could also have seen that she wasn't so interested in small talk (hence the parody!) so exerted himself to please. He seems to like to please :-)

I don't think it was so much what he was talking about, but the style of his discourse. She's fascinated by it, but she's not used to it, and so doesn't quite understand.
