In this period table knives had carbon steel blades which reacted very badly with some acids in food. Silver-bladed knives evolved especially for fruit.

I imagine this as a pretty little folding knife with mother-of-pearl sides and a sharp silver blade, just the thing for delicately peeling an apple or pear.
