Henry's own words from Chapter 5 were "All is safe with a lady engaged: no harm can be done." There is also a sentence somewhere about the destruction of Julia's hopes putting an end to expectations from Mrs Grant. It seems to me that by going for Maria over Julia, Henry is going for the option which is less likely to get him trapped into commitment.

Also, I reckon he likes playing on the dangerous side - talk about forbidden fruits...
