Are you new?

Thinking over the passage mentioned above and remembering JulieW´s posting about Mrs. Elton´s connections to slavery it suddenly came to my mind whether those more waiters engaged for the evening than their own establishment could furnish could mean she wanted to engage slaves for that job. Otherwise she could have asked servants of the neighbourhood - but I am not sure whether this was standard practice. Any ideas?
