I don't think Jane was born yesterday. Emma's tendencies (spurred on or inspired by whatever causes we want to attribute them to) could well have been evident for a long time now to Jane. Just because we meet Emma during her 21st year of life does not mean that's when Jane first became aware of her personality quirks and formed her strategies for dealing with Emma. Jane may well have learned long ago to remain reserved! (I know there are individuals in life who I know to do that with!!) This guardedness does not begin with the current situation, it seems, and may well stem from previous observations on Jane's part!
