Mr. Knightley would not have dropped out of her life. The "dearest you will always be, whatever the event of this hour's conversation" is meant to reassure her of his constant friendship even if she rejects him. They have essentially been best friends for such a long time. Besides, poor Mr. Woodhouse would lose his company too.

As for Darcy and Wentworth, they were never friends with Elizabeth or Anne before either the first or the second proposal. It was either a formal acquaintance or a romantic relationship. It would have been awkward for these two gentlemen to have continued the relationship in any form after a second refusal.
