Actually Emma has been neglectful in contributing food:

"...Mrs. and Miss Bates loved to be called on, and she knew she was considered by the very few who presumed ever to see imperfection in her, as rather negligent in that respect, and as not contributing what she ought to the stock of their scanty comforts."

I think most people think of the pork Emma sends over to the Lady Bateses and what a generous portion it is. The pork is sent over not long after the above thought which appears to be the direct result of realizing her neglect and finally doing something about it. And even this visit she makes is a gamble that it will be the lesser of the two evils of having to listen to Harriet's hankering about Mr. Elton which is, of course, Emma's own fault and listening to Miss Bates. She decides to take her chances with Miss Bates since it is not time for a letter from Jane. Ha! :)
