Hmm... Well, I took that passage differently. After all, if Emma was told that they rose every morning at six, and often ate ham for dinner, and Mrs. Martin told Harriet that she mended socks well, but Emma mostly noticed what Harriet said about the size of their parlours and the number of their cattle, that would speak more to the details by which Emma's attention was caught.
I repeat, I am not saying you are wrong. I guess I am waiting and seeing, since a great deal of what we know of Harriet is through Emma's eyes. If Harriet is quoted rather than paraphrased, and still sounds materialistic and upwardly mobile, that will carry more weight with my reading.
