I noticed, as well, that Mrs. Weston speaks so gently, even excusing her giving an opinion to Mr. Knightley during a private, friendly chat, by referencing her closeness to Emma. Mr. Knightley is much more forthright, yet Mrs. Weston feels she cannot match him. Is this a social issue? Or a factor of their personalities? Certainly, Mrs. Weston will have a gentle address, to have been so beloved by such a gentle soul as Mr. Woodhouse -- maybe it has become a habit of hers?
