It reminds me of the post you wrote puzzling out the dancing partners during the MP group read. :-) I think the bovine metaphor works really well in this case- it invokes a pastoral imagery for the placid inhabitants of Highbury. I wonder what kind of cows the others were... ;-) (Mr. Knightley as a cow is killing me! lol).
